Ingredients of Lamb Shank

  • 2 lamb shanks
  • 1 teaspoon of salt, or simply to taste
  • Ground black pepper preferably fresh ground or to taste
  • 1 tablespoon of olive oil
  • 1 onion chopped already
  • 2 large carrots cut into 1-inch pieces
  • 1 large celery, cut into 1-inch pieces
  • 3 cloves of garlic and finely chopped
  • 5 mushrooms half cutted
  • 2 teaspoons of tomato paste
  • 1 can or bottle of beer
  • 2 sprigs rosemary
  • 1 pinch of cayenne pepper

Steps to follow

Step # 1

As a first step, put a pinch of salt and pepper on the lamb shank.

Step # 2

Add olive oil to a deep and medium-sized pan now put it on medium-high heat. For 5 minutes put lamb and start cooking, keep on turning side by side as you need. Cook until it is golden browned. Remove the lamb shank from the pan and put it into some other pot. Turn the heat from high to medium.

Step # 3

In the same pan put in onion (chopped), celery, mushrooms, carrot, and also garlic. Put a big pinch of salt. Until the juice from the vegetables starts coming out, you have to stir and cook for 2 minutes. Now you can add the tomato paste. Stir to coat that paste for almost 1 minute. Pour in the beer and also stir in rosemary. Now heat should be high. Bring the sauce mixture to simmer.

Step # 4

Put lamb shanks in the sauce mixture. Make the heat low. Cover and simmer til lamb is almost fork-tendered, flip lamb shank after 1 hour, now after 2 hours. let it cool down to room temperature for about 30 minutes. Refrigerate it for 8 hours or you can simply wait overnight.

Step # 5

Skim the fat that has come on the top. Now you have to cover and put it on low heat. Do flipping and also carry on simmering. Wait again almost for 45 minutes and you will see that meat just like falling off the bone. Put aside lamb shanks in the pot that is covered with foil to keep warm.

Step # 6

Now turn the heat up so the sauce starts boiling on high heat. The sauce should be half thick but not too thick after boiling for about 3 minutes.

Add a pinch of salt and cayenne pepper. Put the lamb shanks on a plate, top them with sauce, and garnish with some of your favorite leaves and baby tomatoes.
